Immanuel Communities is seeking a Certified Dietary Manager to work at Deerfield, located at 13731 Hickman Road, Urbandale, IA 50323.  Deerfield has 122 independent living apartment homes, 32 independent living patio homes, 20 assisted living, 24 residential care apartment homes and 30 long-term care/skilled nursing suites. The schedule will generally be Monday-Friday 7:00am-3:30pm or 9:30am-6:00pm, but will vary based on business needs, to include possible weekends and holidays.

 

Pay will be based upon experience, certifications, skills and education.

What You Will Do

 

The overall purpose of this job is to serve as a designated functional manager with oversight of the day-to-day activities of long term care (LTC) Dietary operations and team members. The primary responsibilities of this job include ensuring compliance to regulations, providing management support to the team, and lead resources with assigned team members, as well as functioning as an individual contributor within the food services department. Supports and lives out Immanuel’s Mission and CHRIST Promises.

Oversight of Food Services

60%

  • Assures cooking and food preparation align with each resident’s dietary plan and comply with all applicable local, state county and federal regulations regarding food preparation, storage and handling.
  • Oversees safe and efficient handling of food and food waste, as well as cleaning and sanitizing of all cooking and serving equipment throughout all phases of the meal service and adheres to all applicable regulations.
  • Coordinates activities with Clinical Dietician and, when applicable, the Executive Chef to provide departmental representation at care plans, resident and family councils and other applicable meetings.
  • Supports the departmental budgeting process by accurately forecasting food and non-food supply needs and expenses.
  • Ensures all food preparation and delivery equipment and supplies are kept clean, safe, and visually well-maintained, while adhering to all applicable regulations.
  • Participates in the planning and execution of social events involving residents, families, and broader community gatherings.
  • Clearly communicates food and nutrition information to residents, guests and staff. Seeks input and feedback on meals, menus and dining room experiences.
  • Observes meal services and coaches and corrects as needed.
  • Collaborates with residents, staff, physicians, consultants, vendors and other service providers to support quality nutritional care.
  • Ensures that the overall dining experience meets and exceeds resident satisfaction.
  • Manages maintenance needs by scheduling repairs and following-up on service requests.
  • Coordinates the rollout of new cycle menus and organizes associated diet spreadsheets, recipes, tray cards, order lists, production guides, pull lists, and printed select menus.
  • Oversees implementation of new menus, updating diet spreadsheets, recipes, tray cards, order lists, production guides/pull lists, printed select menus.
  • Completes needed documentation in EHR for new admissions or all MDS scheduled assessments, updating of care plans and progress notes as needed for dietary concerns raised.
  • Maintains the tray card system updated and ensures interventions from care plans are accurately transferred to kitchen software or tray cards.

Staff Management
20%

  • Manages team performance including by setting clear goals, clarifying job expectations, monitoring progress, providing regular feedback and recognition. Develops skills and addresses performance issues related to work using the performance improvement process.
  • Allocates and directs staffing needs to meet resident, unit/department and organizational needs and collaborates with others to ensure overall staffing needs are met. This includes scheduling and staffing.
  • Assigns day-to-day work activities; directs the functional and technical job performance of team members.
  • Interviews, hires, orients, terminates, promotes, trains and conducts performance evaluations.
  • Assures that direct reports have thorough knowledge of their position. Maintains competence and compliance of all staff in department through frequent rounds, and direct observation of food preparation, serving and clean-up areas.

Compliance

15%

  • Assures consistent readiness for surveys and inspections within the dietary department and wherever food and beverages are served.
  • Participates in all safety, security and infection control programs that are mandatory as well as those required and provided by the department.
  • Demonstrates work practices consistent with Immanuel department-specific safety, security and infection control policies.
  • Inspects meals and assure that standards for appearance, palatability, temperature and serving times are timely.

Other 5%

  • Performs other duties as assigned or requested.

Skills & Requirements

Education-

  • Associate Degree in Food and Nutrition or equivalent education to allow registration with the American Dietetic Association as a Diet Technician.
  • Equivalent years of experience may substitute for education requirement.
  • Certified Dietary Manager (CDM) and Serve Safe certification preferred, but must be willing to get both.

Experience-

  • Two (2) years of food preparation and service experience required, preferably in a Long-Term Care setting.
  • Equivalent years of education may substitute for experience requirement.

 

KSA- Knowledge Skills and Abilities-

  • Knowledge of data entry, computer skills appropriate to enter information into menu program, MDS and initiating care planning process.
  • Knowledge and application of sanitation, foodborne illness, and cross-contamination policies and procedures.
  • Knowledge of budgeting principles.
  • Knowledge of therapeutic diets.
  • Skills in verbally communicating with others in a compassionate and professional manner, including residents and their families.
  • Skills in hiring, training, and managing kitchen services employees.
  • Ability to learn, understand, and comply with food code rules and regulations, and DHHS rules and regulations for dietary programming in long term care.
  • Ability to work effectively and collaboratively in a diverse and multi-cultural environment.
  • Ability to cordially serve seniors, show compassion, listen, and be respectful of residents’ needs.
  • Ability to interact effectively with people with physical, psychosocial and /or behavioral limitations.
  • Ability to work with minimal supervision.

 

Work Schedule Expectation:

  • This position requires flexibility in working hours to effectively support staff who work varied schedules. Managers are expected to be available during the evenings and weekends, and to work beyond 40 hours per week when necessary to meet operational needs and ensure consistent leadership coverage.
